THALAPPAKATTI CHICKEN BIRYANI

INGREDIENTS:

Basmati Rice - 2 Glasses

Chicken - 900 gram

Shallots - 20

Ginger - 1 big piece

Garlic - 12 cloves

Green chilly - 4

Coriander leaves - 1 handful

Mint leaves - 1 handful

Chilly powder - 1 tspn

Turmeric powder - 1/2 tspn

Coriander seeds - 2 tspn

Cumin seeds - 1 tspn

Fennel seeds - 1/2 tspn

Pepper corn - 1/2 tspn

Almond/Cashew nut - 6 to 8

Aniseed - 1

Cinnamon sticks - 1 big stick

Bay leaves - 1

Cloves - 10

Cardamom - 3

Mace - 2 small piece

Lemon - 1

Curd - 4 tbspn

Salt - to taste


Ready to start.🤗🤗

Put the coriander seeds. almond, pepper, star aniseed, bay leaf, mace, cinnamon stick, cloves, cardamom, cumin seeds and fennel seeds into the mixer

Powder it well and keep it aside.

Add 20 shallots. ginger, garlic, coriander and mint leaves, green chilly into the mixer.

Coarse grind and keep aside.

Take 3tspn oil and 2 tbspn ghee in a cooker.

Add the ground ginger, garlic, green chilly, mint and coriander leaves paste to it and saute well.

Add the ground powders, 1 tspn chilly powder and 1/2 tspn turmeric powder to the mixture now.

Saute well.


Add 4 tbspn curd to it now.

Add the cleaned chicken to it and mix well.

Add salt and saute well for 3 minutes.

Add 1 glass water, necessary salt and cover and cook the chicken.


Add 3 glasses of water water and check for salt..

Add juice of one lemon to this.

Add 1/4 hand mint leaves to it and mix well.

Allow it to boil.

Add the drained rice, mix well, cover and cook for 20 minutes on low flame.

Biryani is done.
