INGREDIENTS:

Basmati Rice - 3 cups

Chicken - 1 kg

Onion - 4

Ginger - 1 big piece

Garlic - 10 to 12 cloves

Green Chilly - 8

Tomato - 3

Turmeric powder - 1/2 tspn

Cardamom - 5

Cloves - 5

Cinnamon - 4 small sticks

Bay leaves - 2

Cashew nut - 10

Curd - 1/2 cup

Lime - juice of one small lemon

Mint leaves - one handful

Coriander leaves - one handful

Salt - to taste

Ingredients ready😃

Soak basmati rice for half an hour and drain. Heat ghee/oil in a pan.

Add basmati rice and saute.

Saute until the water content evaporates. Switch off the stove and keep the rice aside.

Heat ghee/oil in a pressure cooker.

Add cardamom, cloves, cinnamon sticks and bay leaves. Fry well.

Add the sliced onion to this now.

Saute the sliced onions until it changes colour.

Add the cut tomatoes and fry well until oil separates.

Add ginger garlic paste and saute.

Add slit green chillies next and keep sauteing.

Add coriander leaves and mint leaves and keep frying.

Add turmeric powder and keep frying.

Soak the cashew nut in water for around 20 minutes. Grind it into a smooth paste.. You can add kaskas too and grind along with it. (I did not have the seeds with me.. so could not add). Mix the ground cahsew with curd and add to the fried mixture.

Once it is fried well, add the chicken pieces and stir well. The masala should be coated properly. Keep frying for at least five minutes.

When the chicken pieces are fried well add basmati rice to it.

Mix the rice well with the chicken. Add 3 cups of water. Do not add more than that as a little water will come from the chicken. Even if the water is a little less than 3 cups, it will be fine, but ensure that you do not increase the water quantity.

Add juice of one small lemon to it and necessary salt. Mix it well.

Close the pressure cooker and cook. Wait for one whistle and switch off the flame..Open the lid once the pressure has gone.

Tasty biryani ready to be served.👩‍⚖️👩‍⚖️

Serve the biryani with raita. This is easy, quick and simple. Children will really enjoy.😊😊
