Paneer Biryani

INGREDIENTS:

Basmati Rice - 1 cup

Paneer - 200 gm

Onion - 2

Ginger - 1 big piece.

Garlic - 8 cloves

Green chilly - 2

Tomato - 1

Curd 3 tbspn

Turmeric powder - 1/2 tspn

Chilly powder - 1 tspn

Coriander powder - 1 1/2tspn

Garam masala - 3/4 tspn

Cumin powder - 1/2 tspn

Cinnamon sticks - 2

Cloves - 4

Cardamom - 4

Bay leaves - 1

Star anise - 1

Coriander leaves - a handful

Salt to taste


All set to start 🙂

Heat oil in a pan and add paneer.

Fry until the paneer turns slightly golden brown.

Take water in a vessel.

Add cloves, cardamom and cinnamon sticks to the water and allow it to boil.

Add the washed and soaked rice to the boiling water.

Add lime juice and necessary salt to the boiling water. Cook and drain the rice and keep it aside.

Heat oil/ghee. Add bay leaf, cloves, cinnamon stick and cardamom.

Add sliced onion and saute.

Add crushed ginger, garlic and green chilly paste..

Add turmeric powder, garam masala and cumin powder. Fry well.

Add chilly powder and coriander powder.

Add tomatoes and saute until it turns soft.

Add curd, mix well and then add a handful of coriander leaves and combine well.

Add the fried paneer now and combine well with the fried mixture. Add necessary salt.

Cover and cook on low flame for 5 to 8 minutes and switch off the stove.

Let us start with the layering. First add half the fried masala to the bottom of the vessel.

Next layer with rice and then add chopped coriander leaves and a little butter on top.

Add the remaining masala now.

Add the remaining cooked rice and top it with chopped coriander leaves and butter.

Cover and cook on low flame for around 15 munutes.

Biryani is now ready. Mix it gently.

Paneer biryani is ready.
