MADAKKU

INGREDIENTS:

Maida - 2 glasses

Yellow colour/turmeric powder - 1/4 tspn

Salt - to taste

Rice flour - 2 tbspn

Sugar - 1/2 glass

Water - 1/4 glass


Take 2 glasses of maida, salt and pinch of yellow food colour or turmeric powder into a bowl.

Pour necessary water (1/2 glass)and make it into a nice dough.

The dough should be tight. Leave it aside for 15 minutes.

Divide the dough into two portions.

Roll it and spread as much as you can. Apply ghee on top of it.

Dust rice powder on top of it.

Now start folding from one end to the other.

The fold is now ready.

Cut into small pieces in this manner.

Take one cut piece and roll in this manner. Roll all the pieces like this and keep it aside.

Heat oil and put the rolled pieces one by one into the hot oil.

You can see the layers now. When one side turns golden brown flip it over to the other side.

Now ready to be taken out.

The layers have come beautifully.

Let us make the sugar syrup. Add half a cup sugar to the pan.

Add 1/4 cup water.

Keep stirring until it turns into one string consistency.. You can see my video for it.

Coat the madakku with the thick sugar syrup.
