CHICKEN POTATO STIR FRY

INGREDIENTS:

Chicken - 500 gms (boneless)

Potato - 1

Onion - 2

Ginger - 1 big piece

Garlic - 6 cloves

Green chilly - 1 or 2

Red chilly - 8

Cinnamon sticks - 2 pieces

Cloves - 4

Cardamom - 3

Fennel seeds - 1 tspn

Pepper - 3/4 tbspn

Coriander seeds - 2 tbspn

Curry leaves - a few

Salt - to taste


All set

Heat a pan and dry roasst Cinnamon sticks, cloves, cardamom, coriander seeds, fennel seeds, pepper and red chilly until it turns brown and the raw smell goes.

Allow it to cool and add it to a mixer to make it into a smooth paste.

Grind it to a smooth paste and keep it aside.

Heat oil in a pan. add the sliced onion, ginger, garlic, green chilly and curry leaves. Fry until it turns into a golden brown colour.

Add the ground paste to it and fry well.

Next add the chicken. I marinated the boneless chicken with a little turmeric powder and salt.

Add necessary water and salt and allow it to cook.

When the chicken is almost done add the diced potato. If necessary add a little water and salt.

Cook until it becomes dry and well cooked.

Dry chicken potato fry ready.
